Shoya Maruhachi - an old Japanese house for cafe and restaurant

P7121408.JPGShoya Maruhachi is located at Shinden, Hakuba Iwatake. An old farmers house which was built in Edo era. Took the American high school students there when we accepted them as a host family last month after experiencing EX adventure. When we entered, the front area was renovated but still thick old pillars and structures were also there. You can order some drinks and cafe there. Also you can have some dinner at night. Peach pudding

P8200703.JPGTried to make some peach puddings and done :-) Expected a lot more beautiful in color, but tastes good because enough much cream were used. Also tried some cups for it. Small ones for individual demands and large ones for party size. The one in the pic here is served from a large one by adding a couple of mints.

Cooked some apple pies and lasagna

P1120005.JPGIt was snowing outside today but no need to remove snow. I concentrated on cooking some apple pies and lasagna. The rum I bought the other day got chance to be used.

P1120010.JPGDone! Put some ice cream on top of an apple pie which is just done. What an amazing combination but I cant take it coz of my diet!

P1120007.JPGI use this lasagna. Wave shape at the longer edge. The waves bothers the lasagna to get connected when they are boiled.





P1120011.JPGAnyway, they connect easily in hot water, so I use this kind of "secret weapon" to make it easier to cook!




P1120009.JPGPut some boiled lasagna then sause, repeat it some time and put some white sauce and cheese on top. Put them in an oven to grill. A bit of fresh rosemarry makes it richer.
 I cut the lasagna when I put them in the oven board, so it needs more time for me to cook but easier to eat when they are done.

A Happy New Year 2011

rum_01.JPG Bought a bottle of Rum today as our stock went less and less. I don't drink alcohol in regular bases, just an occasional drinker. But I use some for cooking. Rum is a must to cook apple pie.

Pumpkin pudding

pumpkin_pudding01.jpgIt seems that some pumpkins are now growing in our tiny farm, I thought it's just one or two, so I asked my mom to harvest them. But...actually it seems there are more... :o

I am not ready to eat only boiled pumpkins, so I cooked some pumpkin puddings. We have some mint as well, so many of the ingredients are from our own :)

Puddings

puddings01.jpgI made these puddings in some small souffles. I do cook, it changes that the way how to cook something depends on the time. For example something must be sweeter before than now but nowadays less sweet things might be preferred because of the diet boom. It seems that there are many ways to cook puddings, I have my way to do as well as others. So i always try to find the best way for it by repeating some failures and success.



puddings02.jpgThis one is in a bigger vessel originally for baking some cakes. 30 minutes needed in an oven. 20 minutes for souffles but this is bigger, so needed more time.




puddings03.jpgBiggest of the three!Very big but shorter then the previous vessel, so it just needed 40 minutes being in an oven.
I guess you know you can enjoy puddings soon after you take some from an oven if you have ever made any. Usually we enjoy puddings taking them out from refridgeators but hot ones are also great!. This is only those who make puddings by themselves can enjoy because puddings sold in shops are usually cold.

Mulberry jam

Picked some mulberries and made its jam. Mulberries are sweet but look like almost black rather than red. So if you don't brush your teeth after having some, your teeth look like almost black which is like Ohaguro that married women had in old Edo era here in Japan:-) Maybe good for women to avoid sukebe guys around lol....

Strawberry 2008

Time for harvesting strawberries! We grow some strawberries but it seems that it might be a bit cold for them to grow here in Hakuba. Never seen any bit ones sold in markets. Strawberries are red but the flowers are white like you see.

Strawberries attract birds with their red fruits, so we put some nets to protect fruits. But the nets are not very small, just need to protect them from birds. Bugs can go through the nets because they are to work for pollination :-)

Making some strawberry jam. Add some sugar and leave them for an hour or so. Water comes out from the strawberries then simmer the pan. Add some lemon juice. That's all, easy isn't it!? Wish the jam itself also looks this beautiful but actually it looks a little bit darker in color.




Icecream, strawberry jam and spare mint. The color combination is like Italian flag. Would like to have it but I am still on my diet to lose some extra weight!!! LOL

3 kinds of desserts made from vegitable geratine.

I often cook something from vegitable geratine which we call "Kanten". It's made from sea weed. We can get dried kanten in some shops easily. When you cook something from vegitable geratine, you just put some vegitable geratine in some water then simmer/boil it in some water. Vegitable geratine is one of healthy food, you can use it just like geratine. Maybe I had better inform you that vegitable geratine would never be melt again even if you heat it after you curdle it while normal geratine do.

Plain Kanten with sweet black beans. If you don't add any sugar when you boil kanten, it does not taste at all which is a bit tough to eat lol... So usually we add something sweet. When you add some fruit in this plain kanten with sweet black beans, that is what we call "Mitsumame" here in Japan. Actually this plain kanten with some sweet black beans is my diet menu!!! I eat some of it ( usually 150 grams ) BEFORE I have dinner to avoid eating too much yummy stuff :(

Fruits terrine Gyunyu(milk) kan ( abbreviation for kanten ). We can try any fruits. I've noticed that we have many kinds of fruits which are like yellow in color but not so many in other colors. Peach, pineapple, banana, apple, orange etc are all like yellow but if it's red - maybe strawberry, rasberry etc and if it's green- kiwi? Bananas feel great when they come into my mouth, as grapefruits are a bit sour , it would be outstanding in the gyunyukan, so I think some love it love it very much but others don't love it don't love it very much.

Fruit terrine I made last year. I guess this could be one of bad example in the meaning of combination. Too much fruit in it. If it's too much, it easily gets out of shape when you get it out of a form. I guess maybe that's a good idea to put as much fruits as it does not get out of shape :-)


Mizu Yokan. Made from vegitable geratine, anko ( sweet bean paste ), some water and sugar. Now trying some combinations : how much water , anko , sugar for some vegitable geratines. Mizu Yokan is one of popular sweet thing especially in summer I think because usually we eat them after we cool it very good.

Pudding cookies

An American guest gave me some cookies she made. It was so yummy with excellent vanilla flavor. I asked her if she had used some vanilla beans and she answered that she had used some vanilla puddings.



She gave me the receipt on her checking out date.
I was surprised to find "Vanilla pudding".

Huh?


I imagined to add some vanilla puddings to other mixtures which was kinda stupid lol... I asked it to her again then she told me it was just like some powder. If I remember right, there was some instant pudding powder available. I went shopping to get some.


Because of the difference as to measuring stuff, sometimes I need to convert gallons to cc, lbs to grams but this time it is described by "cups", so it was easier. I need to convert only about 375 F into Celsis ( 190C ).







Preparing everything. When you cook dessert, you can not fix the taste latter, so you need to measure everything accurately in advance.

Adding powders gradually after adding eggs.

I was getting a bit nervous because in proportion to get the powder, it was getting much harder and harder than expected. Finally I decided to adjust some - I added some milk to soften it.


Done! Hmmm... looks different from the first picture lol.....
Probably because I added some milk to soften the cookies before grilling.
I should have done as described :(


I glued the receipt at my receipt book so that I can check it whenever I need.

Daikon

Harvested some daikon in our tiny farm.

Hum.... looks funny in shape lol.... I guess perhaps they grow avoiding some stones if they meet any on the way to grow more under ground. Probably those kinds shapes are not acceptable in markets to sell but anyway they are what we grow, so at least it's safe to eat them because we don't use any dangerous medicine.

Green soybeans








Green soybeans. We Japanese often boil them and spread salt and call them "Edamame". Edamame is good with beer. When you get in a beer house or a beer hall whatever in Japan, you often find people order this edamame thing a lot.



But a lot of people don't know the fact that this is soybean! Because we use different words for "green" soybean and "dried" soybean. Edamame is a word for "green" soybean but we call "dried" soybean Daizu. No relational sounds at all. So if they don't see the process how green soybeans are dried to be "dried" soybeans ( Daizu ), they usually don't know the green soybeans and dried soybeans are same stuff. Maybe this misunderstandings does not happen among English speaking people because they use "soybean" for both.



A bunch of soybeans are getting dried little by little.

Swedish gratin


Saw this receipt on TV yesterday though they didn't mention what to prepare. I just tried to cook one by myself on my way. Prepared some potatoes, anchovies, onions, butter, flour, milk, macaroni, salt and white pepper. Anchovies are so salty, so I used less salt than usual for other stuff.

I put some macaronis at one side of the plate, didn't put any at the other side to check the difference. Some prefer this plate with macaroni, some do without macaroni. It seems it depends on who has it.

Soba season


Soba is one of traditional Japanese noodle. Harvested mainly in some cold regions like in Nagano. This pic left is what I had at "Gokui" soba noodle restaurant when I visited Togakushi back in May this year when I visited Kinasa to see skunk cabbage flowers ( Mizu basho in Japanese ).
Autumn is the harvest time for soba as well, it's fun to have some again soon.

p.s. Some people have very tough allergic to soba, you'd better know if you had the allergic to soba or not before you try. ( But wonder how.... )

Making tomato sauce


We harvest enough tomatoes in our tiny farm, I cooked a pan of tomato sauce today. As the climate in Hakuba goes cooler than other places, I think the time we can harvest tomatoes is a bit latter than other places.
I like it when olive oil and garlic make some smell. I put enough tomatoes in the pan then simmer it for some hours. Tomato sauce made from fresh tomatoes are very tasty, you can enjoy it on top of pasta. Nothing else needed, it's one of recommended receipt by our customers.

Curry with summer vegitables


As we grow some vegitables, I tried to make some curry with them harvested now. Maybe this is very unique. Curry with egg plants, tomatoes, green peppers together with onions, carrots and potatoes! With this way, you can take a lot more vegitables when you get tired with hot and humid weather in big cities. A recommended one at this time of the year.

Blueberry jam

Probably the climate here in Hakuba is good for blueberry, we often find some blueberry at this time of the year. I cook some blueberry jam today.

Prepare a pan, put some blueberry and sugar, then leave them for an hour or two. Some water comes out from blueberry to prepare the cooking process.


Make fire to cook blueberry jam. Make sure the fire should not be so strong. Sometimes stir it.


Make the fire weaker to simmer it. Roughly 30 minutes needed to boil/simmer this amount of blueberry jam. Not like making some apple jam which needs hours.


Blueberry jam on top of some yogurt with pepper mint, looks a cool dessert. You can freeze some blueberry jam in some packs for stocks, interesting thing is blueberry jam is never frozen completely if it's normal freezer temperture ( minus 18- minus 20C ).

Some cool dishes.

It's rainy season now, when it's forwarding summer, sometimes we would like to have some "cool" dishes.

A dish with sour - cucumber, wakame (sea weed) with some strawberries harvested in our tiny farm and a piece of Japanese pepper leaf.


As there were some fresh horse mackerels available, we made them as "tataki" (minced raw horse mackerel). As Hakuba is located in mountains, fresh sea fish is not always available. But when we find some, sometimes try this way.

When it gets hot and humid in big cities, it feels as if it were hell sometimes, hope eveyone is alright by taking some healthy meals like those which helps to refresh people.

Two herbs

I put some thymes at some meatballs as thymes in my garden grow a lot.

I don't hesitate to add some herbs to some meat plates as I have already learned that they help to digest meat.


Camomile tea. Camomiles in our field getting in bloom. Smells like green apples.
